About your host

Carolina is a classically trained chef from the Lazio region of Italy and did cooking stages (short term internships) in France and Switzerland before settling in the Central Coast of California. Her incredibly popular restaurant Laziali in Carmel continues to delight diners nightly with rustic recipes inspired by her childhood.


After 32 years as the executive chef, Carolina hung up her chef’s toque and now offers intimate cooking lessons and her annual retreat, The Pasta Passage. Book your spot today to learn from the maestra of Roman and Lazio style pastas during the trip of a lifetime!

About your accommodations
We’ll stay at the Villa Francesca in Central Italy, 90 miles from Rome. The villa is located in the rolling hills of Lazio with views of Tuscany and Montepulciano to the north, the Tyrrhenian Sea to the west, and bustling Rome to the south. The villa is surrounded by fertile farm land with its neighbors growing durum wheat, grapes and olives. There is a small grove of olive trees on the property that we’ll have the opportunity to help harvest.

 The villa has a swimming pool and a pergola-lined path for serene walks. You’ll love calling the Villa Francesca your home for the week!
